“Creating plant-based protein bars is challenging, since these proteins harden a lot more than in the case for dairy-based proteins – which impacts shelf-life,” says An Van-Meerbeeck, Senior Application Specialist, Snacks & Cereals. “Through the careful formulation and application of our ingredients, we have been able to overcome this challenge. For example, sorbitol or glycerol can maintain the softness of the bar,” she adds.

“We took the trends that we saw on the marketplace, such as salt reduction and new texture experiences, and tried to transform these into applications that fit within these trends by relying on our formulation know-how,” An explains. “For example, the application of Alberger® salt [uniquely-shaped crystals that enhance the consumers’ salty flavor experience when the potato chips hit their tongue] can deliver real progress in salt reduction, while the crux of our portfolio and expertise enables to experiment with different textured coatings for a true sensory experience,” she adds.
