Midera Food Processing will bring a broad portfolio of baking technology to südback 2026, highlighting equipment for dough preparation, bread production and baking across artisan, retail and industrial operations. Exhibiting alongside its Sveba Dahlen and Glimek brands in Hall 7, Stand 7D52, the group will demonstrate how bakeries can combine reliable individual machines with coordinated production systems.
The exhibition marks an important year for Midera, which became an independent business following the separation of Middleby Corporation’s Food Processing division in July. Now operating with more than 30 specialist brands, Midera focuses on equipment and automation for bakery, snack and protein production, with solutions spanning preparation through to packaging.
Dough Handling and Bread Production
A complete bread production line will form a central part of the display, bringing together a dough divider, rounder, intermediate proofer and moulder. The arrangement illustrates how successive stages of dough handling can be linked to achieve a consistent product while reducing the need for manual intervention.
For bakeries producing several bread varieties, maintaining accuracy across these stages is particularly important. Reliable dividing and rounding support uniform weights and shapes, while controlled intermediate proofing helps prepare dough pieces for moulding. Visitors will be able to discuss how line configurations can be matched to available space, product requirements and production volumes.
Oven technology will also feature prominently. Sveba Dahlen will showcase rack ovens from its C-Series and V-Series, with the former aimed at larger retail bakeries requiring increased capacity and the latter suitable for both artisan and industrial applications.
The D32E deck oven from the D-Series will be presented with an oven loader, demonstrating an approach to more efficient loading and unloading in bread and pastry production.
Taken together, these displays give bakery operators an opportunity to compare different ways of managing oven capacity, workflow and product variety, whether their priority is an expanded artisan offering or a more demanding production schedule.
Flexible Baking Across Applications
Beyond conventional bread baking, visitors can explore the Artista Deli tunnel oven, equipped with a stone belt for applications including Neapolitan-style pizza. A further tunnel oven display will illustrate electric and gas-fired configurations and a choice of conveyor belts, reflecting the different thermal requirements of bakery products.
These technologies underline a wider consideration for producers: investment decisions increasingly involve flexibility as well as throughput. The ability to accommodate different baking profiles, product formats and operational requirements can help bakeries respond to changing demand without replacing entire production systems.
