FAM STUMABO, specialist in precision food cutting solutions, has announced that Finnish premium meat producer Huhtahyvät Oy has successfully integrated its Flexifam 55 machine into the company’s mettwurst production line — delivering precise, consistent salami slicing despite traditionally soft and fatty Finnish salami textures.
A Challenge Met: Precision Cutting for Soft Salami
For over 30 years, family-owned Huhtahyvät — known for its Lihamestari and Gourmet brands — has supplied over 5 million kg of premium meat products annually across Scandinavia. To optimise its pizza‑salami line, production manager Timo Mustaniemi sought a slicing solution that could handle Huhtahyvät’s naturally soft, high‑fat salami without sacrificing cut quality. Standard equipment failed to deliver.
Tailored Testing Leads to the Flexifam 55
Timo Mustaniemi and Forsfood Oy, FAM STUMABO’s Finnish partner, sent product samples to FAM STUMABO’s advanced lab in Belgium. Through bespoke trials, researchers identified the optimal cutting temperature and switched from serrated to flat circular blades to prevent casing jams. The result: precise cutting into uniform 5 × 5 × 15 mm strips, ideal for consistent packaging.
“The texture demanded a precise approach… lab testing was instrumental in identifying the right combination of machine settings and temperature,” said Marko Försti, Development Manager, Huhtahyvät.
Seamless Integration and Operational Benefits
Following successful validation, the Flexifam 55 was leased and trialled on-site at the production facility. With technical support from Forsfood and FAM STUMABO, Huhtahyvät integrated the machine into its production system. Today, the salami is pre-cut and strip-cut with high precision before being conveyed directly into packaging. The outcome: increased throughput, minimal blade wear, uniform cuts, and dependable long‑term performance — even when slicing other delicate meat products.
“The ability to test both in the lab and on‑site gave us total confidence… Flexifam 55 quickly proved to be the right fit for our needs,” added Päivi Uotila, Production Manager, Huhtahyvät.
